Vanilla Cream Spread

Ingredients

low-fat ricotta cheese

vanilla extract

large Quaker Chocolate Crunch Rice Cakes or Caramel Chocolate Chip Corn Cakes

Directions:
Combine the ricotta cheese, sugar and vanilla in a blender or food processor and blend until satin smooth. Spread 2 tablespoons of the mixture on top of each rice cake and serve.
